  • 1 tablespoon olive oil
  • 1/2 cup grape tomatoes, quartered
  • 2 cloves garlic, crushed
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried basil
  • 1 cup cooked diced chicken
  • 6 oz marinated artichoke hearts and liquid (1/2 jar)
  • 1 cup cauliflower rice
  • 1 cup fresh baby spinach, chopped
  • 1/4 cup sun dried tomatoes, chopped
  • 3 sweet peppers, halved

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Microwave halved sweet peppers for about 4 minutes to soften them.
  3. In a large sauté pan, heat olive oil over medium heat. Sauté crushed garlic and grape tomatoes for 1 minute.
  4. Add oregano, basil, artichokes, and sun-dried tomatoes; simmer for a few minutes.
  5. Stir in cooked chicken and cauliflower rice; season with salt and pepper.
  6. Mix in chopped spinach until wilted; allow to cool slightly.
  7. Stuff each pepper with the filling mixture and place them in a baking dish sprayed with cooking spray.
  8. Bake for about 10 minutes until tender.
