  • 1/3 cup brown sugar, firmly packed (for topping)
  • 1/4 cup cold butter (for topping)
  • 1/4 teaspoon cinnamon powder (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin by lining it with muffin liners.
  2. In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, combine the reserved pineapple juice, milk, egg, and melted butter until well mixed.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined; avoid overmixing.
  5. Fold in the crushed pineapple gently.
  6. Spoon batter into muffin liners about two-thirds full.
  7. Bake in preheated oven for about 25 minutes or until golden brown and a toothpick inserted comes out clean.
