  • 1 tablespoon fresh tarragon (or 1 teaspoon dried)
  • 2 tablespoons olive oil
  • 2 tablespoons white apple vinegar
  • 4 cod fillets (approx. 1.5 pounds total)
  • 1/2 cup Wondra flour
  • Salt and black pepper (to taste)
  • 2 tablespoons canola oil
  • 2 tablespoons unsalted butter
  • 2 tablespoons heavy cream

Instructions

  1. In a small bowl, mix together whole-grain mustard, capers, tarragon, olive oil, and white apple vinegar.
  2. Heat the mixture in a small saucepan over medium-low heat for about 5 minutes until warmed through. Stir in butter and heavy cream until smooth; set aside.
  3. Pat cod fillets dry, season with salt and pepper, then coat with Wondra flour.
  4. Heat canola oil in a cast iron skillet over medium heat. Cook the cod for about 4-5 minutes per side until opaque throughout.
  5. Serve the cod on plates drizzled with the mustard-caper sauce.
