  • 1/2 cup brown sugar (packed)

  • 1 teaspoon vanilla extract

  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup jelly (grape or strawberry)

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together peanut butter, softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the egg and vanilla extract; mix until fully combined.
  4. In another bowl, whisk together flour, baking powder, baking soda, and salt. Gradually blend this dry mixture into the wet mixture until smooth.
  5. Scoop about 2 tablespoons of dough, flatten it into discs, and place half on the prepared baking sheet.
