  • 1 teaspoon fine sea salt
  • 1/3 cup heavy cream (room temperature)
  • 1/3 cup whole milk (room temperature)
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla bean paste
  • 12 pineapple rings (drained)
  • 12 maraschino cherries
  • 6 tablespoons unsalted butter (room temperature)
  • 2/3 cup brown sugar (packed)
  • 2 tablespoons ground cinnamon
  • 4 tablespoons unsalted butter
  • Pinch fine sea salt
  • 1 cup powdered sugar
  • 23 tablespoons whole milk

Instructions

  1. Prepare the Tangzhong by whisking together water and bread flour in a saucepan over medium heat until it forms a paste. Cook for about 4–5 minutes, then set aside.
  2. In a stand mixer, combine remaining flour, sugar, yeast, and salt. Add heavy cream, whole milk, egg, vanilla bean paste, and tangzhong. Mix until combined.
  3. Gradually add softened butter while kneading on low speed until the dough is smooth and elastic (about 10 minutes).
  4. Let the dough rise for about 30 minutes.
  5. Prepare the filling by mixing brown sugar, softened butter, and cinnamon in a bowl until smooth.
  6. Assemble the caramel in a baking pan with melted butter, brown sugar, and salt; place pineapple rings and cherries on top.
  7. Roll out the dough into a rectangle and spread the cinnamon filling evenly before cutting into strips and rolling them up.
  8. Place rolls in the prepared pan over the fruit topping and let rise again for about 1–2 hours.
  9. Bake at 325°F for approximately 35–40 minutes until golden brown.
