  • 240g (2 cups) unbleached all-purpose flour
  • 100g (3/4 cup) icing sugar
  • 1/2 tsp salt
  • 1 tbsp freshly grated pink grapefruit zest
  • 1 tbsp fresh thyme
  • 240g (1 cup) cold cubed unsalted vegan butter
  • 200g (1 ½ cups) icing sugar (for icing)
  • 60g (¼ cup) freshly squeezed grapefruit juice

Instructions

  1. Preheat the oven to 160°C (320°F) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine flour, icing sugar, salt, grapefruit zest, and thyme.
  3. Add cold vegan butter cubes and mix until crumbly.
  4. Press mixture into cohesive dough; if too crumbly, add cold water as needed.
  5. Roll dough to about 1/4 inch thick and cut into desired shapes.
  6. Bake for 30-35 minutes or until edges are lightly golden; cool on wire racks.
  7. For icing, mix sifted icing sugar with grapefruit juice until smooth; drizzle over cooled cookies.
