  • ½ cup unsalted butter (room temperature)
  • 1 cup granulated sugar
  • 2 large eggs (room temperature)
  • 1 teaspoon vanilla extract
  • 2 ½ cups + 2 tbsp all-purpose flour
  • ½ teaspoon fine sea salt
  • ½ teaspoon baking soda
  • 2/3 cup strawberry preserves
  • 1 cup powdered sugar
  • 1 ½2 tbsp whole milk
  • Rainbow sprinkles (for decoration)

Instructions

  1. Preheat the oven to 375°F (190°C) and line an 8×8 baking pan with parchment paper.
  2. In a stand mixer, cream together butter and sugar until light and fluffy (about three minutes).
  3. Mix in eggs and vanilla until just combined.
  4. Gradually add flour, salt, and baking soda; mix until the dough comes together.
  5. Chill dough for about 20 minutes.
  6. Press half of the dough into the bottom of the prepared pan.
  7. Freeze this layer briefly while preparing the second layer.
  8. Spread strawberry preserves over the second layer of dough.
  9. Place the frozen layer on top of the preserves and bake for 25–28 minutes until golden brown.
  10. Allow to cool completely before icing with a mixture of powdered sugar, milk, and vanilla; decorate with sprinkles.
