  • 2 packages yeast (4 1/2 teaspoons)
  • 6 tablespoons shortening or unsalted butter
  • 1 cup granulated sugar
  • 9 cups unbleached all-purpose flour
  • 3 1/2 cups raspberries
  • 4 ounces cream cheese
  • Zest of 1 large lemon
  • 1/2 cup softened butter
  • 1/2 cup light brown sugar
  • 1/3 cup granulated sugar
  • 1 1/2 teaspoons cornstarch
  • 1 tablespoon salt
  • 2 cups hot water
  • 2 eggs, beaten

Instructions

  1. Dissolve yeast in lukewarm water; set aside for five minutes.
  2. In a stand mixer bowl, combine shortening, sugar, salt, and hot water; cool to lukewarm. Add yeast mixture and two cups of flour; mix well.
  3. Incorporate beaten eggs and gradually add remaining flour until smooth. Knead until satiny.
  4. Let dough rise in a greased bowl for about 30 minutes until doubled in size.
  5. Roll out the dough, spread with softened butter, sprinkle with brown sugar, then layer raspberries mixed with sugar and cornstarch.
  6. Roll up tightly and cut into two-inch pieces; place in a greased baking pan.
  7. Allow rolls to rise again until double (about one hour). Preheat oven to 350°F (175°C) and bake for 25–32 minutes until golden brown.
  8. Mix frosting ingredients until smooth; spread over cooled rolls.
