  • 2 pints cherry or grape tomatoes
  • 1 pound strawberries
  • 1 pint blueberries
  • 8 ounces fresh mozzarella cheese pearls
  • 1/2 cup chopped fresh basil
  • 3 tablespoons honey
  • 3 tablespoons white balsamic vinegar
  • 3 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Halve the cherry tomatoes and hull and slice the strawberries. Roughly chop the basil leaves.
  2. In a large bowl, combine halved tomatoes, sliced strawberries, chopped basil, blueberries, and mozzarella pearls.
  3. In a small microwave-safe bowl, heat honey for 15-20 seconds to thin it out. Whisk in white balsamic vinegar and olive oil until well combined.
  4. Pour the dressing over the salad mixture, season with salt and pepper, and gently toss to combine.
  5. Chill in the refrigerator for at least 30 minutes before serving to enhance flavors.
