  • 2 medium zucchinis, sliced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 large red onion, wedged
  • 1 pint cherry tomatoes
  • 6 cloves garlic, minced
  • 3 tablespoons extra-virgin olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • Juice of 1/2 lemon
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine eggplant, zucchinis, bell peppers, and onion. Add olive oil, oregano, thyme, salt, and pepper; toss to coat.
  3. Spread seasoned vegetables on a baking sheet in a single layer. Roast for 20 minutes.
  4. Add cherry tomatoes and garlic; mix well and roast for an additional 10–12 minutes until tender.
  5. Drizzle with lemon juice before serving.
