  • 1 (15 oz) can chickpeas (drained and rinsed)
  • 3 tablespoons fresh lemon juice
  • 3 tablespoons tahini
  • 2 cloves garlic

  • 1/4 teaspoon cumin
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven's broiler and line a baking sheet with aluminum foil.
  2. Core, seed, and slice the red bell peppers into quarters. Arrange them on the baking sheet.
  3. Broil for 10-15 minutes until charred, then place in a resealable bag for about 10 minutes to steam.
  4. Once cooled, peel the skins off the peppers and chop one into larger pieces.
  5. In a food processor, combine chickpeas, lemon juice, tahini, garlic, salt, and cumin; pulse until smooth.
