  • 3 pounds salmon fillet (skin-on)
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon kosher salt
  • 2 tablespoons taco seasoning
  • 2 ears fresh corn (grilled)
  • 1 pint cherry tomatoes (quartered)
  • 2 avocados (diced)
  • ¼ red onion (finely diced)
  • ½ jalapeño (seeded and diced)
  • 1 clove garlic (grated)
  • ½ cup cilantro (roughly chopped)
  • Juice of 2 limes

Instructions

  1. Preheat your grill to medium heat.
  2. Place salmon on foil, drizzle with olive oil, and season with salt and taco seasoning; wrap securely.
  3. Grill the salmon for about 15 minutes until flakey. Add corn alongside for grilling.
  4. In a bowl, combine tomatoes, avocados, onion, jalapeño, garlic, cilantro, lime juice, olive oil, and salt to make the salsa.
  5. Cut grilled corn off the cob and mix into the salsa.
