  • 2 cups cooked jasmine rice
  • 1 cup grape tomatoes
  • 2 cups fresh spinach
  • 1 can chickpeas
  • 3 tablespoons freshly squeezed lemon juice
  • 1/2 cup feta cheese (or vegan feta)
  • Olive oil
  • Garlic
  • Oregano
  • Paprika
  • Red pepper flakes

Instructions

  1. Season chicken thighs with oregano, paprika, salt, and red pepper flakes. Heat olive oil in a large skillet over medium heat; add minced garlic and sauté until fragrant.
  2. Cook chicken for about 6–7 minutes on each side until golden brown and cooked through. Remove from heat and let rest before slicing.
