  • 2 tbsp Olive Oil (total)
  • 0.5 tsp Salt
  • 1 tsp Black Pepper
  • 6 medium Potatoes (cut into wedges)
  • 1 cup Greek Yogurt (for creaminess)
  • 0.5 Cucumber (grated, squeeze out excess moisture)
  • 1 tbsp Lemon Juice (fresh-squeezed)
  • 0.3 cup Fresh Dill or Mint (use what you love)
  • 1 pinch Salt
  • 2 cups Lettuce (your favorite leafy green)
  • 2 medium Tomatoes (use a mix of heirloom varieties)
  • 2 Cucumbers (sliced or diced)
  • 0.5 Red Onion (soaked in water for milder taste)
  • 0.5 cup Kalamata Olives (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Toss potato wedges in olive oil, salt, and pepper; roast for 30-35 minutes until golden.
  2. In a mixing bowl, combine ground beef with minced garlic, onion, breadcrumbs, baking soda, herbs, olive oil, salt, and pepper. Mix gently.
  3. Form into golf ball-sized meatballs and place on a parchment-lined baking sheet. Bake for 25-30 minutes until cooked through.
  4. For tzatziki, mix Greek yogurt with grated cucumber, minced garlic, lemon juice, dill or mint, and salt.
