  • 1 pound ground turkey
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 1/2 pounds zucchini, diced
  • 2 cups cooked groats (or brown rice, quinoa, etc.)
  • 1 can (14.5 oz) diced tomatoes
  • 1/2 teaspoon oregano
  • 1/2 teaspoon smoked paprika
  • 1/2 cup fresh basil, finely chopped
  • 7 ounces aged cheddar, shredded

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat. Add ground turkey and cook until browned, about 5–7 minutes.
  3. Add chopped onion and minced garlic; sauté for 3–4 minutes until softened.
  4. Stir in diced zucchini, cooked groats or rice, diced tomatoes (with juices), oregano, smoked paprika, and fresh basil. Mix well.
  5. Transfer mixture to a baking dish and sprinkle shredded cheese on top.
  6. Bake for 25 minutes or until cheese is melted and bubbly.
