  • 500 g Penne Pasta
  • 400 g Shrimp (cleaned)
  • 1 large Avocado (peeled and cubed)
  • 250 g Cherry Tomatoes (halved)
  • 34 Spring Onions (chopped)
  • 1/2 cup Basil Leaves
  • 1/4 cup Olive Oil
  • Juice and zest of 1 Lemon
  • 1 tsp Fresh Garlic (crushed)
  • Black Pepper (to taste)

Instructions

  1. Cook the penne pasta in salted boiling water until al dente. In the last few minutes of cooking, add the cleaned shrimp. Drain and rinse under cold water if desired.
  2. In a small bowl, whisk together olive oil, lemon juice, lemon zest, crushed garlic, and black pepper.
  3. In a large mixing bowl, combine the cooked pasta and shrimp with cubed avocado, halved cherry tomatoes, chopped spring onions, and basil leaves. Gently toss with the dressing until well mixed.
