  • 4 Tablespoons all-purpose flour
  • 4 pounds country style beef ribs
  • Salt/pepper to taste
  • 2 Tablespoons olive oil
  • 10 new red potatoes (or two large russets cubed or thick sliced)
  • 2 medium carrots (sliced thick)
  • 1 onion (sliced and then halved)
  • 115 ounce can sauerkraut (drained)
  • 1/2 cup apple juice
  • 1 teaspoon caraway seed
  • 1 Tablespoon fennel seed
  • 1 whole apple (cored and sliced)
  • 1 Tablespoon flour
  • 2 Tablespoons cold water

Instructions

  1. Season beef ribs with salt and pepper, dredge in flour, and sear in a frying pan until golden brown.
  2. In the slow cooker, layer potatoes, carrots, onion, and drained sauerkraut. Pour apple juice over layers.
  3. Sprinkle caraway and fennel seeds on top. Add apple slices before placing seared ribs on top.
  4. Cover and cook on low for about 8 hours or until ribs are tender.
  5. If desired, remove cooked ingredients from slow cooker once done. Transfer remaining juices to a small saucepan.
  6. Bring sauce to a simmer; combine water/flour mixture into it while stirring continuously for about 2 minutes until thickened.
