  • 20 full graham crackers (about 308 grams)
  • 1/4 cup granulated sugar (50 grams)
  • 12 tablespoons unsalted butter (170 grams), melted
  • 1 â…“ cups semisweet chocolate chips (226 grams)
  • 3/4 cup sweetened condensed milk (185 grams)
  • 2 large egg whites
  • 1/4 cup light corn syrup (60 grams)
  • 1/4 cup water (60 grams)
  • 1/4 teaspoon cream of tartar
  • 1/4 teaspoon fine sea salt
  • 1 1/2 teaspoons vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, sugar, and salt. Stir in melted butter until well mixed. Press into the bottom of a greased baking dish and bake for 10 minutes; cool.
  2. Melt chocolate chips with sweetened condensed milk in a saucepan over low heat until smooth. Pour over cooled crust.
  3. Beat egg whites with cream of tartar until stiff peaks form. Boil corn syrup, water, and salt; gradually whisk into egg whites until glossy.
  4. Spread vegan marshmallow topping on chocolate layer and toast lightly if desired. Cool completely before cutting into squares.
