  • 10 ounces mini vegan marshmallows
  • 6 cups crispy rice cereal
  • ½ cup crushed graham crackers
  • 1 cup mini vegan marshmallows (for filling)
  • ½ cup chocolate spread or melted chocolate
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon coconut oil

Instructions

  1. Melt butter in a large saucepan over medium-low heat; stir in mini vegan marshmallows until smooth.
  2. Remove from heat and fold in crispy rice cereal and crushed graham crackers until fully coated.
  3. Press the mixture onto greased parchment paper into a rectangle about ½-inch thick.
  4. Spread chocolate evenly over the rectangle and top with remaining mini marshmallows.
  5. Roll tightly from one long edge using parchment paper to form a log.
  6. Wrap in parchment paper and refrigerate for 30–45 minutes until firm.
  7. Melt chocolate chips with coconut oil; drizzle over the chilled log before slicing into rounds.
