  • 1/8 teaspoon salt
  • 3 large eggs
  • 2 tablespoons olive oil
  • 8 tablespoons granulated sugar (5 tbsp + 3 tbsp)
  • Zest of 1 lemon
  • 7 oz Ricotta cheese
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C) and grease or line a muffin tin.
  2. In one bowl, mix the flour and salt; in another, whisk together olive oil, sugar (3 tbsp), eggs (1 egg + 2 eggs), and lemon zest until smooth.
  3. Gradually add the dry ingredients to the wet mixture, stirring gently to combine.
  4. For the filling, mix Ricotta cheese, vanilla extract, and lemon juice in a separate bowl until smooth.
  5. Spoon half the muffin batter into each cup, add a dollop of Ricotta filling in the center, then top with remaining batter.
  6. Bake for about 50 minutes or until golden brown and a toothpick comes out clean.
  7. Allow to cool slightly before transferring to a wire rack.
