  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/3 cup granulated sugar
  • 1 stick (4 ounces) unsalted butter, VERY cold and cut into tiny pieces
  • 1 large egg
  • 1/2 cup whole milk
  • 2 tablespoons heavy cream
  • 1 cup fresh strawberries, hulled and quartered
  • 1 large egg, beaten
  • 1 teaspoon water
  • 2 tablespoons sugar, for sprinkling
  • 2 tablespoons heavy cream
  • 3/4 cup confectioners' sugar
  • 1 teaspoon vanilla extract
  • Tiny pinch of salt (1/8 teaspoon or less)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, salt, baking powder, baking soda, and sugar.
  3. Cut very cold butter into small cubes and incorporate it into the flour mixture until it resembles coarse meal.
  4. In a separate bowl, whisk together egg, milk, and heavy cream; add to the flour mixture and stir until just moistened.
  5. Gently fold in quartered strawberries.
  6. Turn dough onto a floured surface; shape into an 8-inch circle and cut into 8 wedges.
  7. Place on prepared baking sheet, brush with beaten egg wash, sprinkle with sugar, and bake for about 18 minutes or until golden brown.
  8. Allow to cool slightly before glazing if desired.
