  • 500g strawberries (fresh or frozen)
  • 190g all-purpose flour
  • 75g natural cocoa powder
  • 115g melted unsalted butter
  • 100g granulated sugar
  • 100g brown sugar
  • 2 large eggs (room temperature)
  • 330g milk (room temperature)
  • 250g cream cheese (softened)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 70g strawberry jam (from jam filling)
  • 7 strawberries (halved for decoration)
  • 1 tablespoon water
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the strawberry jam filling by cooking strawberries, sugar, and water until thickened; let cool.
  2. Preheat the oven to 180°C (350°F) and grease two round cake pans.
  3. Sift together the flour, cocoa powder, baking powder, baking soda, and salt.
  4. Whisk melted butter, oil, sugars, eggs, and milk until smooth. Combine with dry ingredients until just mixed.
  5. Divide batter into pans and bake for 30-35 minutes; cool before removing from pans.
  6. Beat cream cheese and butter for frosting; gradually add powdered sugar and mix in vanilla extract and cooled jam.
  7. Assemble by layering cake with jam filling and frosting; decorate as desired.
