  • 2 cups (240g) all-purpose flour
  • ½ cup (100g) granulated sugar
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 8 ounces (227g) fresh strawberries (hulled and chopped)
  • ¾ cup (180mL) milk
  • ½ cup (113g) unsalted butter (melted)
  • 1 large egg
  • ½ teaspoon vanilla extract
  • the juice of half of a lemon (about 2 Tablespoons)
  • zest of one lemon
  • ¼ cup (50g) granulated sugar
  • 2 Tablespoons (30mL) warm water

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, whisk together flour, baking soda, and salt.
  3. In another bowl, mix melted butter, granulated sugar, egg, milk, vanilla extract, lemon juice, and lemon zest until smooth.
  4. Gently fold the dry ingredients into the wet mixture until just combined; small lumps are okay.
  5. Carefully fold in chopped strawberries until evenly distributed.
  6. Pour the batter into the prepared loaf pan and bake for about 60 minutes or until a toothpick inserted comes out clean.
  7. Allow cooling for 10 minutes before transferring to a cooling rack; prepare a glaze with lemon juice mixed with warm water and sugar while cooling.
  8. Drizzle glaze over the cooled bread before slicing.
