  • 2 tablespoons lime zest
  • 1 1/2 cups granulated sugar

  • 3 large egg yolks
  • 1/2 cup whole milk
  • 1/2 cup lime juice
  • 24 drops green food coloring
  • 3/4 cup salted butter (for frosting)
  • 4 ounces cream cheese
  • 1/2 cup frozen sweetened strawberries (pureed)
  • 56 cups powdered sugar

Instructions

  1. Preheat oven to 350°F and prepare two 8-inch round cake pans.
  2. Mix cake flour and baking powder in a medium bowl and set aside.
  3. In a stand mixer, beat together salted butter, granulated sugar, and lime zest until fluffy.
  4. Add eggs one at a time, then mix in lime juice until smooth.
  5. Gradually add dry ingredients and whole milk alternately; stir in green food coloring if desired.
  6. Pour batter into prepared pans and bake for about 25 minutes or until the center springs back when touched.
  7. Cool cakes in pans for seven minutes before transferring to wire racks.
  8. For frosting, beat together salted butter and cream cheese until smooth; mix in pureed strawberries followed by powdered sugar until desired consistency is reached.
  9. Level cooled cakes with a serrated knife, frost between layers, on top, and around the sides.
