  • 4 cups strawberries
  • ½ cup water
  • ¾ cup granulated sugar
  • 4 tablespoons lemon juice
  • 1 ½ cups heavy cream
  • 16 oz mascarpone cheese
  • ¾ cup granulated sugar
  • 260 g ladyfingers
  • Freeze-dried strawberries (for dusting)
  • Fresh strawberries (for garnish)

Instructions

  1. Prepare the strawberry syrup by cooking strawberries with water for 5 minutes. Mash and strain to extract juice; mix with sugar and lemon juice, then simmer until thickened.
  2. In a bowl, whisk mascarpone with sugar and vanilla until smooth. In another bowl, whip heavy cream to stiff peaks and fold into the mascarpone mixture.
  3. Combine cooled strawberry syrup with the mascarpone filling. Dip ladyfingers briefly in remaining syrup and layer them in a serving dish with the filling.
  4. Refrigerate for at least 6 hours or overnight before serving. Dust with freeze-dried strawberry powder and garnish with fresh strawberries.
