  • 3 leaves Romaine lettuce (sliced into ribbons)
  • 1 tablespoon cider vinegar
  • 4 radishes (thinly sliced)
  • 1/4 cup sweet onion (finely chopped)
  • 3 tablespoons cilantro (chopped)
  • 1 jalapeno pepper (thinly sliced, seeds removed for less heat)
  • 2 medium zucchini (cut into matchsticks)
  • 10 small corn tortillas
  • Olive oil for frying

Instructions

  1. Prepare the New Mexico Red Chile Sauce in advance if desired.
  2. Gather and prepare all toppings: crumble cheese, slice vegetables, chop cilantro.
  3. Heat a non-stick skillet over medium-high heat with oil. Fry zucchini until tender.
  4. Preheat the oven to 220°F.
