  • ¾ cup granulated sugar
  • ⅓ cup powdered sugar
  • ⅓ cup vegetable oil (or canola oil)
  • 1 Tablespoon water
  • 1 large egg
  • ½ teaspoon vanilla extract
  • ½ teaspoon almond extract
  • 2¾ cups all-purpose flour (stir, spoon, & level)
  • ¼ teaspoon baking soda
  • ¼ teaspoon cream of tartar
  • ½ teaspoon salt
  • 8 ounces cream cheese (cold)
  • ½ cup unsalted butter (1 stick, room temperature)
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries (hulled and sliced)
  • 1 cup canned mandarin oranges (drained well and patted dry with paper towel)
  • 1 cup fresh blueberries
  • 1 cup fresh kiwi (peeled and sliced)
  • 1 Tablespoon apricot jam (for glaze, optional)
  • 2 teaspoons water (as needed for glaze)

Instructions

  1. Preheat oven to 350°F and lightly grease a quarter sheet pan or 9×13-inch baking dish.
  2. In a stand mixer, cream together the butter, granulated sugar, and powdered sugar until light and fluffy.
  3. Add the vegetable oil, water, egg, vanilla extract, and almond extract. Mix well until fully combined.
  4. In a separate bowl, combine the all-purpose flour, baking soda, cream of tartar, and salt. Add this mixture all at once to the wet ingredients in the stand mixer and mix until everything comes together into a dough.
  5. Empty the cookie dough into the prepared pan and press it flat evenly across the bottom. Bake at 350°F for 16–18 minutes until edges are slightly golden and center looks set. Remove from oven; place on a cooling rack to cool completely.
  6. Using an electric hand mixer, beat cold cream cheese in a large bowl until smooth. Gradually add butter two tablespoons at a time; continue beating until well blended. Add powdered sugar and vanilla extract all at once; blend until smooth.
  7. Spread cream cheese frosting evenly over cooled sugar cookie bars using a spatula.
  8. Layer sliced fruits on top, arranging them into rows or sprinkling small pieces over as desired.
  9. Optionally, nuke apricot jam for 10–15 seconds in the microwave, add water to thin it out if necessary, and gently brush/dab jam over fruit until lightly coated.
  10. Use a sharp knife to cut your Sugar Cookie Fruit Pizza into 15 pieces. Serve immediately!
