  • 2 medium butternut squash
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 2 cups cooked shredded chicken
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/4 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp ground cinnamon
  • Salt and black pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut butternut squash in half lengthwise and brush cut sides with olive oil. Drizzle honey over each half, then sprinkle with cinnamon, salt, and pepper.
  3. Place squash cut side down on a baking sheet and roast for 30–40 minutes until tender.
  4. In a mixing bowl, combine shredded chicken, chicken broth, Parmesan cheese, onion, garlic; season to taste.
  5. Scoop out some flesh from each roasted squash half and mix it into the filling.
  6. Generously stuff each half of the roasted squash with the chicken mixture and return to the oven for an additional 15 minutes until golden brown.
