  • 3 cups mini vegan marshmallows

Instructions

  1. Preheat the oven to 400°F (200°C). Prick sweet potatoes with a fork and bake on a lined sheet pan for 40-50 minutes until soft.
  2. Cool the sweet potatoes for at least 20 minutes before peeling.
  3. In a mixing bowl, whisk together sugar, melted butter, milk, vanilla extract, and salt.
  4. Add peeled sweet potatoes to the mixture and mash until smooth; stir in eggs until well combined.
