  • 1 1/2 cups fresh or frozen blueberries
  • For Streusel: 1/2 cup all-purpose flour, 1/4 cup packed brown sugar, 1/4 cup cold unsalted butter cut into small pieces

Instructions

  1. Preheat your oven to 400°F (200°C) and line a muffin tin.
  2. For the streusel: Mix flour and brown sugar in a bowl; cut in cold butter until crumbly. Set aside.
  3. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  4. In another bowl, combine melted butter, eggs, milk, and vanilla; pour into dry ingredients.
  5. Gently mix until just combined; fold in blueberries.
  6. Fill muffin cups two-thirds full; top with streusel mixture and remaining sugar.
  7. Bake for 5 minutes at 400°F (200°C), then lower to 375°F (190°C) and bake for an additional 15–18 minutes until golden.
