  • 20 oz cheese tortellini
  • 10 oz cherry tomatoes
  • 8 oz mozzarella pearls
  • 1 cup chopped spinach
  • ¼½ cup chopped basil
  • ½ cup extra virgin olive oil
  • 2 Tbsp balsamic vinegar
  • 34 garlic cloves

Instructions

  1. Cook tortellini in a large pot of salted boiling water until al dente according to package instructions. Drain and rinse under cool water.
  2. While tortellini cooks, chop spinach, halve cherry tomatoes, and mince garlic. Combine these ingredients with mozzarella pearls in a mixing bowl.
  3. Add cooled tortellini to the bowl along with olive oil, balsamic vinegar, Italian seasoning, salt, and pepper. Toss gently until well mixed.
  4. Cover and refrigerate until ready to serve. Toss again before serving and drizzle with optional balsamic glaze.
