  • 1 yellow squash (sliced)
  • 1 eggplant (sliced)
  • 1 red pepper (sliced)
  • ¼ cup red onions (sliced)
  • Olive oil spray
  • ½ teaspoon dill
  • Salt and pepper (to taste)
  • 2 tablespoons butter
  • 4 slices thick bread
  • 4 ounces Dill Havarti cheese (divided)
  • 4 ounces Gouda cheese (divided)

Instructions

  1. Preheat oven to 400°F. Toss sliced vegetables in olive oil spray and dill; season with salt and pepper.
  2. Spread vegetables on a baking sheet; roast for about 10 minutes until slightly tender.
  3. Brush one side of each bread slice with melted butter.
  4. In a skillet over medium-low heat, assemble sandwiches: place one slice of bread buttered side down, layer half the Dill Havarti cheese, half the roasted vegetables, half the Gouda cheese, and top with another slice of bread buttered side up.
  5. Cook each sandwich for about 4-6 minutes on each side until golden brown and cheese is melted.
