  • 1 piece chicken bone
  • 1 large onion, chopped
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Rinse the dried split peas under cold water. Chop the onion, carrots, and celery into small pieces.
  2. In a large pot or Dutch oven, heat a splash of oil over medium heat. Sauté the chopped onion until translucent.
  3. Add the chopped carrots and celery; cook for about 5 minutes until softened.
  4. Stir in the rinsed split peas, chicken bone, thyme, bay leaf, salt, and pepper. Pour in enough water or broth to cover all ingredients by about an inch.
  5. Bring to a boil over high heat, then reduce heat to low and cover. Simmer for about 90 minutes or until peas are tender.
  6. Remove the chicken bone and bay leaf before serving. Adjust seasoning as needed.
