  • 1 1/2 cups jasmine rice
  • 1 cup full-fat coconut milk
  • 1 1/2 cups water
  • Zest of 2 limes
  • 2 tablespoons freshly squeezed lime juice
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 teaspoon granulated sugar (optional)
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons toasted coconut flakes

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, whisk together the coconut milk, water, and rinsed rice. Add sea salt, black pepper, and optional sugar. Stir once to ensure everything is evenly distributed. Place the pan over medium-high heat until it reaches a rolling boil.
  3. Once boiling, reduce heat to low. Cover the saucepan tightly with a lid and let it simmer undisturbed for 15 minutes. Do not lift the lid during this time to allow proper steaming.
  4. Turn off heat but keep lid on; let it rest for an additional 5 minutes. After resting, remove lid and fluff rice with a fork. Stir in lime zest, lime juice, and half of chopped cilantro. Taste and adjust seasonings if needed.
  5. Transfer rice to a serving bowl. Sprinkle remaining cilantro and toasted coconut flakes on top before serving immediately.
